Vegetable

The "Agricultural Sciences" educational garden shows a small, selected range of field vegetables that are grown on arable land. Vegetables are predominantly herbaceous plants whose edible parts can be of different types. A distinction is made between different groups of vegetables depending on the part of the plant that is utilised.

Vegetables are categorised into groups, making it easier to gain an overview of the variety of vegetable plants and their use in agricultural cultivation.

Root and tuber vegetables include, for example, carrots, beetroot, radishes, parsnips and kohlrabi.
Leafy vegetables include lettuce, spinach, chard and rocket.
Cabbage vegetables include white cabbage, red cabbage, savoy cabbage, cauliflower and broccoli.
Tomatoes, cucumbers, peppers, courgettes and pumpkins are categorised as fruit vegetables.
The stem vegetables are represented by asparagus, celery and leeks.
